OUR UNIFINE MILL
Unlike stone-ground flours where the temperature during grinding can get pretty high, the temperature in our Unifine Mill stays low. And unlike conventional flour milling processes that use water, our Unifine Mill doesn’t use anything but the grain itself to make the flour.
First, we grind the grain in our Unifine Mill. Now, “grinding” might be the common word for breaking whole grain into flour, but in our Unifine Mill you could say the grain is shattered, rather than ground.
A high-speed rotor hits the grain so hard it literally shatters the grain into tiny pieces.

And unlike conventional flour milling processes that use water, our Unifine Mill doesn’t use anything but the grain itself to make the flour.
In the Unifine Process the grain enters a high speed rotor and is instantly shattered into fine flour – even the bran and germ are burst!
Air goes through the rotor with the grain and blows the flour out, thus keeping it cool throughout the process, retaining many natural nutrients.
With the Unifine Process the natural oils in the grain are kept intact and do not get hot like in regular grain milling and stone ground milling.
Unifine Process flour is great for fine-textured breads.
